The art of distillation

At the heart of Aharonyan Distillery stands the copper still where the character of every spirit is born.

Here tradition meets modern engineering. Fruit, time, copper and the distiller’s skill — the elements that shape every spirit.

We do not follow a fixed formula. Every fruit calls for its own approach, its own rhythm and its own temperature.

Our spirits do not begin with distillation — they begin with living fruit.

Fermentation — the foundation of character

After the harvest, the fruit is carefully processed and undergoes natural fermentation.

No added sugar. No artificial aromas. No rushing the process.

We control the temperature and the length of the fermentation, letting the yeast gently unlock the aromatic potential of the fruit.

It is at this stage that the future profile of the distillate takes shape — its depth, its structure and its purity.

Good distillation is impossible without proper fermentation.

Technique and precision

Our distillation system is made of copper and fitted with a column, which lets us steer the aromatic profile of the spirit with precision.

The process runs under the constant control of the master distiller:

  • manual temperature control
  • step-by-step separation of the fractions
  • precise cutting of the “heads” and the “tails”
  • keeping the “heart” of the distillate — its purest and most aromatic part

The number of distillation cycles is determined by the character of the particular fruit and the style of the spirit.

Copper naturally purifies the spirit, softens its texture and helps retain the natural fruit aroma.

We work in small batches — Small Batch — so that the quality of every bottle stays under our control.

The cellar and aging in oak

In the quiet of our cellar the distillate comes of age.

Beneath these vaults, where a natural coolness and a steady humidity are preserved, time becomes a full participant in the process. There is no hurry here — only the slow, noble unfolding of character.

Some of our distillates are aged in carefully selected oak barrels. In contact with the wood the spirit gradually opens up, gaining depth, structure and complexity.

Oak does not hide the fruit — it brings out its virtues.

During maturation a gentle micro-oxidation takes place, which makes the texture rounder and silkier. Subtle shades of vanilla appear, along with light almond nuances and delicate woody accents that form a long and elegant finish.

We follow the development of every batch closely, letting the distillate reach a balance between the pristine purity of the fruit and the noble depth of aging.

Every aged release is a limited edition, created not to a schedule but when it is ready.

Time is our principal ingredient.
